As a result, the oxidized sulfur ion changes color and acquires a dark color. This point reminds us of the color change that occurs in an overcooked egg. In other words, cooked egg yolk; It loses its antioxidant properties as a result of the oxidation of sulfur ions in the methionine amino acids it contains. Oxidized methionine; just like cholesterol esters, that is, LDL, which is waste cholesterol, it increases the tendency to clot. In summary, oxidized methionine causes the initiation of mechanisms, such as oxidized cholesterol, that pave the way for the development of atheroma plaques that cause occlusion of the vessels. Cholesterol in eggs; It is the main source for the synthesis of steroid-derived hormones that are necessary for the growth and development of the embryo.
