What is Celiac Disease?
Celiac disease is a lifelong and chronic allergy and sensitivity of the small intestine to the protein called gluten. Grains such as wheat, barley, rye and oats contain gluten.
The ingested food is decomposed into its components in the small intestine and mixed with the blood through the intestinal mucosa. The ability of our body to receive adequate nutrients is provided by many folds in the small intestine called villi protrusions. When celiac patients consume gluten-containing foods, villi protrusions and folds are destroyed due to allergies in the intestinal mucosa, and they become smaller and smaller. Thus, the intestinal area gradually decreases and the nutrients taken become non-absorbable.
When you smell the nice smell of bread while passing by the bakery, when you are very hungry and cannot find anything to eat, when you meet with your friends while they are eating pizza, lahmacun, waffles, pasta, bagels, wafers, when you can only drink water, you tell yourself about celiac and say, ‘There is no life without bread. ?’ How do you feel when you want to eat ice cream to cool off in the hot summer months and cannot find suitable ice cream for yourself?
Bread, pita, simit, poaça, börek, pizza, hamburger, iskender, fresh cake, dessert with syrup, eclairs, profiteroles, cookies, waffles, chocolate, raw meatballs and many other foods, which are indispensable for Turkish society, will not be in your life. Besides, you will have to research every piece of art you use in detail, including toothpastes, lipsticks, creams, shampoos, medicines and cardboard cups, and you will not be able to get any artifacts that you are not sure about.
For example, you were offered chocolate in your environment and you had to turn down the offer by explaining your situation. While you are waiting for the people around you to be understanding towards you, you will be faced with a reaction saying ‘one bite is nothing, taste it for my sake’. However, that one bite that you will consume will completely disrupt your gluten-free diet that you have been following for years without any evasion and cause great problems in your digestive system. Since your intestinal flora is disrupted, you will experience many problems such as severe abdominal pain, bloating, diarrhea, constipation, vitamin deficiencies, fatigue, weakness and skin diseases. If this kidnapping has been done by a child at the age of development, apart from all these disorders, it will cause him to experience developmental delay.
For celiacs, even 1 spoon of gluten in 1 ton of food is very wasteful. During meal preparation, utensils such as forks, spoons, pans, pots, strainers and plates that have touched or contaminated with gluten-containing foods should not be touched to the foods of individuals with celiac disease.
Even if wooden spoons, Teflon pots and cutting boards are washed properly, they absorb gluten and become dangerous for celiacs. These items should be for individuals with celiac disease only and should not be used other than gluten-free foods.
What are the Symptoms of Celiac Disease?
Celiac symptoms span a wide spectrum. It usually causes typical complaints such as diarrhea and abdominal pain, but it can also manifest itself with complaints related to other systems without any findings related to the intestines. This is why celiac distress is known as the diagnosed disease. Celiac may not be considered due to atypical symptoms and only receives symptomatic treatment and diagnosis is delayed. Celiac disease can appear in childhood as well as in the 80s. Therefore, celiac should be considered in every age group with symptoms.

How Is It Diagnosed?
The diagnosis of celiac disease is made by serological tests and small bowel biopsy. The first step in diagnosis is serological tests. Demonstrating characteristic histopathological findings in biopsy material is the gold standard in diagnosis. Endoscopic biopsy is performed to confirm the diagnosis for those who show clinical features of celiac disease and/or have positive serological tests.
10 percent of individuals with celiac may also have celiac in their mother, father, siblings or children.
The only treatment system for celiac is a lifelong strict gluten-free diet. Even the slightest glitch is not allowed on the gluten-free diet. Flours, breads, pastas and biscuits specially prepared without gluten are at the forefront of our diet. Artifacts made from rice, corn, potato and soy flour can be consumed. There is no harm in eating fruits, vegetables, eggs and meat works. Following a gluten-free diet can be more rewarding, difficult, and tedious than a regular diet. Since some people may also be lactose intolerant, it is recommended not to take milk and dairy foods at first or to consume lactose-free. With the real and leak-free diet, all symptoms begin to pass slowly and the person leads a healthy life. In the form recommended by your doctor, it is checked once or twice a year whether the diet is going well.
Small escapades do not show immediate symptoms in some people and show an insidious course. It is a matter of kalam to encounter a disease due to these evasions in the future. When the diet is not done precisely and clearly or is diagnosed late, it may occur as diabetes, thyroid, osteoporosis, short stature in children or various cancers.
Currently, the only cure for celiac is a gluten-free diet. It cannot be treated with herbs or other alternative formulas…
It should be remembered that celiac disease is a life style until it is diagnosed, and after diagnosis.
