Although food allergy and sensitivity are not given much importance, it is an insidious, slowly progressing chronic problem that is very common in our country and causes many unresolved problems in patients. When people think of allergies, sudden swelling of the lips, eyes, shortness of breath, shock, and fainting are the conditions that come to mind. But food intolerances develop slowly.

The most known intolerance in the society is Gluten Intolerance. Gluten intolerance is clearly similar to Celiac disease. These patients cannot tolerate gluten. In some studies, it has been stated that non-celiac gluten intolerance is a derivative of an allergic reaction and occurs with an innate immune response.

Food allergies are increasing rapidly compared to the past. Many reasons are blamed for this. Developing diagnostic mechanisms, additives in foods and GMO foods are the usual suspects.

For example, in a study conducted in the USA, the rate of patients who applied to clinics and were diagnosed with food intolerance between 1997 and 2007 increased by 17%. Among these people, there was a dramatic increase in hospitalizations, with a dramatic increase of 36% between 1998 and 2000.

Delayed Type 1 hypersensitivity reaction can be seen in food allergies, and it can lead to urticaria, itching and many different conditions such as IgE dominant and a neurotransmitter discharge called histamine.

Some opportunistic bacteria disrupt this tight junction structure and increase permeability. These bacteria form a structure called Lipopolysaccharide and disrupt the permeability.

Food Sensitivities or leaky gut cannot be identified by conventional allergy testing. Specific tests are required for the diagnosis of this disease (Blood Zonulin Test is one of them). These tests are planned in many different ways, and the most appropriate and beneficial ones are recommended by the clinician’s instructions. Food sensitivity and most likely suspects in leaky gut:
